When you visit Peru, you have to try the ceviche, a dish so popular, it has its own national holiday. Classic Peruvian ceviche is comprised of chunks of raw fish, marinated in lime or bitter orange juice, onions, chili peppers, salt and pepper. There are, of course, plenty of variations on the theme, many of which include cilantro or even tomatoes.

If ceviche is Peru’s national dish, Pisco is its national spirit. One of the most popular ways to enjoy this traditional brandy made with fermented grape juice is in a Pisco Sour. This cocktail originated in Lima and is prepared with egg white, lime juice, simple syrup, and bitters. You’ll find no shortage of Pisco Sours in Lima.

Peru’s capital city is brimming with intriguing neighbourhoods, lively markets, and exciting restaurants. From the historic centre of the city, Plaza Mayor, to the bohemian district of Barranco, the city is full of delightful surprises to be discovered on your Peru vacation.
