RECIPE: Chia Seed Pudding from The Lodge at Kauri Cliffs, New Zealand
Set on 6,000 acres near Matauri Bay, Northland in New Zealand, The Lodge at Kauri Cliffs (one of Goway’s Stays of Distinction) affords spectacular 180-degree views of the Pacific Ocean. Cape Brett and the offshore Cavalli Islands which are part of the panorama, can be viewed from the verandas, lounge, card and dining rooms.

Inspired by current healthier food trends, The Lodge at Kauri Cliffs‘ executive chef has created some new menu offerings, including the divine pudding recipe below.
Ingredients:
- 1 cup Natural Unsweetened Yoghurt
- 1 cup Coconut Cream
- 1 cup Almond Milk
- 4 tablespoons Honey
- ½ cup Chia Seeds
(If you want to be completely dairy free then substitute the yoghurt for a mix of the almond milk and coconut cream.)
Method:
- In a bowl mix all the wet ingredients together, then mix in the Chia seeds
- Leave at room temperature for half an hour and then refrigerate overnight
- The following morning, mix with seasonal fruits and nuts, then spoon into jars or glasses and serve
MAKES 6 SMALL GLASSES/YOGHURT JARS
