Olive Bread, known as Cakes Aux Olives in French, is an appetizer served all around France. This savoury quick bread is one of many different options offered that include vegetables and/or meat in a traditional “cakes” recipe. Get creative with different taste combinations!
While some of the ingredients in the Cakes Aux Olives can be substituted, why not make an authentic French appetizer, which can be served at cocktail hour, tea time, or even while watching this month’s UEFA Euro 2016.
With France hosting the games this year, these bite-size morsels of savoury goodness are so “apropos” as a soccer-watching snack, and are sure to go fast!
- 2 cups all-purpose flour, plus 2 tablespoons
- 2 tsp baking powder
- 4 eggs
- 2/3 cup safflower oil
- 1 cup dry white wine
- 1-1/2 cups pitted green olives
- 1-1/2 cups cubed ham
- 6 oz grated Gruyere cheese (you can use cheddar or jack as substitute)
- 1/4 tsp pepper
- Preheat oven to 350°.
- Drain the green olives of their brine and coat them with 2 tablespoons of flour. Set aside.
- Mix the flour with the baking powder. Add in the eggs, using a wooden spoon to mix into a stiff dough.
- Stir in the safflower oil and white wine. Keep stirring for a couple of minutes until smooth.
- Stir in the floured-coated olives, ham, cheese, and pepper.
- Pour the batter into a non-stick or greased 12-inch loaf pan and bake for 55 minutes to one hour. Test it with a toothpick to make sure it comes out clean.
- Remove the bread from the oven and let it cool 10 minutes before removing it from the pan.
- Cool the bread completely before cutting. Dice into half inch cubes.
Serving Note: This bread loaf can also be served in slices.
